The study reveals that oleic acid promotes the production of fat cells by altering key signaling proteins, raising questions about the role of specific fats in weight gain.

The study, led by Dr. Michael Rudolph from the University of Oklahoma College of Medicine, found that oleic acid boosts the protein AKT2 while suppressing LXR, a regulatory protein. This mechanism accelerates the growth of precursor cells that develop into fat cells. Unlike other fatty acids tested, such as those in coconut oil or soybean oil, oleic acid uniquely increased fat cell proliferation in mice.

Dr. Rudolph likened fat cells to an army: “Oleic acid expands the ‘soldiers,’ creating more storage capacity for excess nutrients. Over time, this can lead to obesity and related diseases if unchecked.”

While human diets are more complex, the researchers noted rising oleic acid levels in food supplies, especially in fast food and limited-diet scenarios.

“Moderation and variety in fat consumption are key,” advised Dr. Rudolph. “Balanced oleic acid levels may be beneficial, but prolonged excess could pose risks, particularly for heart health.”

The study underscores the importance of dietary fat composition in obesity risk. Future research may explore how to mitigate these effects in human diets, emphasizing balanced nutrition.

A high-fat diet rich in oleic acid—a fatty acid abundant in olive oil—could contribute to obesity more than other dietary fats, according to new research published in Cell Reports.
